Vegan Pozole Verde

1 tbsp. Olive oil
1 large diced Onion
1 large (leave a few seeds for heat if you like) Jalapeño
3 – 4 minced Garlic cloves
1 can (25 – 28 oz) drained and rinsed Hominy
2 cans drained and rinsed Red kidney beans
6 medium (about 1 lb.), husks removed, well rinsed and chopped Tomatillos
4 cups (more as needed) Water
4 tbsp. NutraKik® Spicy
1 – 2 juicy Limes
to taste Mineral salt


In large pot, heat oil over medium, add onions and saute for 5 minutes. Add the garlic, jalapeno, and salt cook 1 minute more, or until fragrant. Add the kidney beans, tomatillos, hominy, water and NutraKik® Spicy, bring to a boil, cover askew, reduce heat to low and simmer for 20 – 30 minutes. Add lime juice and season to taste.
